My MIL goes home this morning, and I was unable to take today off because there were too many engineers on vacation today. So my Smart Man will take her to the airport and then goof off the rest of the day. He doesn't have to work today. Humph.

Yesterday was a pretty good day. We exchanged gifts with my MIL on Christmas Eve, so the only thing we had to do yesterday is make the stuffing and the sweet potato casserole before we went to my aunt and uncle's house for the holiday meal. Unfortunately, my Hot Mom and my Hot Sister and their Smart Men got snowed out, and were unable to make it for the dinner.

We'll be opening the rest of the gifts with my Hot Mom and Smart Boy on New Year's Eve, since the boy spent Christmas Eve and Christmas Day with his father.

One of the desserts we made for the gathering is "Pumpkin Rolls." They turned out so well, I decided to share the recipe. They're most delicious. Enjoy!

PUMPKIN ROLLS

Pre-heat oven to 375

FILLING:
(Make first and set aside)
2 cups powered sugar
2- 8oz. packages of cream cheese
8 Tbl. melted butter
1 tsp. vanilla


CAKE:
9 eggs – beat for 5 minutes
3 cups of sugar – mix with eggs
1- 16oz. can of pumpkin
3 Tbl. – Lemon juice
2 ¼ cups Flour
3 tsp. Baking soda
6 tsp. Cinnamon
3 tsp. Ginger
1½ tsp. Salt

Mix beaten eggs, sugar, pumpkin and lemon juice, then add dry ingredients.

Spread 1/3 of the batter in a well greased jelly roll pan – 15x10x1

Bake 15 minutes @ 375 degrees

Gently -turn on damp towel and roll jelly roll style. Let stand for 5-10 minutes in refrigerator. Unroll when cool and spread with filling. Re-roll.

Makes 3 pumpkin rolls. Freezes very well.

Pumpkin Rolls are one of my favorite parts of the holiday. Unfortunately, no one made them this year...

I know, I know, I could have made them, but it takes some of the magic away. Anyway, I'm more known for my tofu concoctions than for dessert treats.

Oh, and I'm back to work too. Bleh.

Shawn, I find I'm disappointed. Sorely disappointed.

The only thing tofu belongs in is Miso Soup.

I really did make miso soup the day before Christmas. :)

I used to be a strict vegan, due to health issues (I was in my 20s and a prime candidate for a heart attack), but after I lost 65 pounds, I started to eat a more varied diet again.

Now, I've gained back 20+ of those pounds, and need to be careful what I eat -- but tofu will always have a special place in my heart. And yes, miso soup? Yum.

But yeah, I'm outta shape. You've got me there. I played racquetball the other day for 3 hours, and it took over a week before the pain went away.

I've decided that the real reason he irks me so much is that he never posts anything unless its to tell someone that they're wrong, wrong, wrong. Even the people who hold basically the same opinion he does. They're not totally wrong...just not right enough. I've a good mind to "Neener, neener, neener" him.

Yeah, it sucked that we couldn't make it to dinner yesterday, I was so looking forward to it! However, I don't know how Smart my man would have been if he had continued on into the teeth of the blizzard.

I did manage to fall asleep at 8:30 last night, and stay that way until 6:00 this morning. So, yay! Another couple of days of that, and I'll be set.

Oh, and thanks for calling me hot. Heh.

Cindi, it's disappointing, but forcing the entire family to drive to NE CO for your funerals would probably suck worse. I'm just sayin'.

Visitors have to be really determined to come all the way up here to visit. Thankfully, I also have handfuls of useless chicken livers I can throw at them. I'm also renowned as an expert tofu weapon designer.

Actually, I do have cookies. And visitors to my home, both real and virtual, are always welcome and treated with respect, as long as they behave appropriately.
