Back to Work

Wednesday, December 26, 2007
My MIL goes home this morning, and I was unable to take today off because there were too many engineers on vacation today. So my Smart Man will take her to the airport and then goof off the rest of the day. He doesn't have to work today. Humph.

Yesterday was a pretty good day. We exchanged gifts with my MIL on Christmas Eve, so the only thing we had to do yesterday is make the stuffing and the sweet potato casserole before we went to my aunt and uncle's house for the holiday meal. Unfortunately, my Hot Mom and my Hot Sister and their Smart Men got snowed out, and were unable to make it for the dinner.

We'll be opening the rest of the gifts with my Hot Mom and Smart Boy on New Year's Eve, since the boy spent Christmas Eve and Christmas Day with his father.

One of the desserts we made for the gathering is "Pumpkin Rolls." They turned out so well, I decided to share the recipe. They're most delicious. Enjoy!

PUMPKIN ROLLS

Pre-heat oven to 375

FILLING:
(Make first and set aside)
2 cups powered sugar
2- 8oz. packages of cream cheese
8 Tbl. melted butter
1 tsp. vanilla

CAKE:
9 eggs – beat for 5 minutes
3 cups of sugar – mix with eggs
1- 16oz. can of pumpkin
3 Tbl. – Lemon juice
2 ¼ cups Flour
3 tsp. Baking soda
6 tsp. Cinnamon
3 tsp. Ginger
1½ tsp. Salt

Mix beaten eggs, sugar, pumpkin and lemon juice, then add dry ingredients.

Spread 1/3 of the batter in a well greased jelly roll pan – 15x10x1

Bake 15 minutes @ 375 degrees

Gently -turn on damp towel and roll jelly roll style. Let stand for 5-10 minutes in refrigerator. Unroll when cool and spread with filling. Re-roll.

Makes 3 pumpkin rolls. Freezes very well.

Pumpkin Rolls are one of my favorite parts of the holiday. Unfortunately, no one made them this year...

I know, I know, I could have made them, but it takes some of the magic away. Anyway, I'm more known for my tofu concoctions than for dessert treats.

Oh, and I'm back to work too. Bleh.

Tofu concoctions?

Shawn, I find I'm disappointed. Sorely disappointed.

The only thing tofu belongs in is Miso Soup.

Bleh.

I really did make miso soup the day before Christmas. :)

I used to be a strict vegan, due to health issues (I was in my 20s and a prime candidate for a heart attack), but after I lost 65 pounds, I started to eat a more varied diet again.

Now, I've gained back 20+ of those pounds, and need to be careful what I eat -- but tofu will always have a special place in my heart. And yes, miso soup? Yum.

Nice job on the weight loss. Now that you're not in your 20's anymore, you might want to consider...exercise.

[The scene begins as Shawn fashions a rudimentary weapon from a pound of extra firm tofu]

"Janieeeeeeece, oh Janieeeeece..."

Janiece Murphy said...

Shawn, you can't catch me. Because I exercise.

It could be a rudimentary projectile weapon. I never pick the "warrior" character in a game you see, I'm much more diabolical. Mwahahahahahaaa.

But yeah, I'm outta shape. You've got me there. I played racquetball the other day for 3 hours, and it took over a week before the pain went away.

Janiece Murphy said...

At least you didn't have a heart attack and drop dead. There's always a bright side...

Hey Shawn,

Six chicken livers would add a real taste treat to those pumpkin rolls.

::Hangs on to Janiece 'cause she runs faster::

Nathan, not on your life.

Congratulations on keeping them thar gayz out of the Corps over at the "e," BTW.

I've decided to stop responding to his posts. Doing so just makes me want to smack him in the face with a shovel.

Shawn Powers said...

Nathan:

Well, you're right. Comparing to chicken livers really does make pumpkin rolls all that much more appealing. :)

(I'm sure that's what you meant)

And I stopped reading the gay threads (pun intended) over at the E. They lost my interest.

I've decided that the real reason he irks me so much is that he never posts anything unless its to tell someone that they're wrong, wrong, wrong. Even the people who hold basically the same opinion he does. They're not totally wrong...just not right enough. I've a good mind to "Neener, neener, neener" him.

Yeah, it sucked that we couldn't make it to dinner yesterday, I was so looking forward to it! However, I don't know how Smart my man would have been if he had continued on into the teeth of the blizzard.

I did manage to fall asleep at 8:30 last night, and stay that way until 6:00 this morning. So, yay! Another couple of days of that, and I'll be set.

Oh, and thanks for calling me hot. Heh.

Janiece Murphy said...

Nathan, I dare you. I double-dog dare you. Because really, you're here for my amusement, and that would make me laugh.

Cindi, it's disappointing, but forcing the entire family to drive to NE CO for your funerals would probably suck worse. I'm just sayin'.

And all the women in our family are Hot. Hot Hotties, I say!

Gimme a minute. Your wish is my command. (At least when its so easy to grant.)

Janiece Murphy said...

Thanks, Nathan. Hee!

I'm considering opening a, "Give Sergeant E. a Big Hug" thread. But I think the humor would be lost on him, so I haven't yet.

Janiece Murphy said...

Shawn, I triple-dog dare you. I would totally post on that thread, yes I would.

It seems evident that the humor would be lost on him, but it wouldn't be lost on us, and that's what counts.

I'm probably going to hell now, Janiece. But your holiday wishes keep coming true. ;)

Janiece Murphy said...

Shawn, you're not going to hell. Or if you are, you'll be in good company.

I've already logged in with my hug. Hehe.

Come on, all you Hot Chicks and Smart Men! Give the Sarge a hug at http://whateveresque.com/phpBB3/viewtopic.php?f=33&t=598

Nathan said...

Shawn wins the internet. Yay!

::deafening applause::

BTW, we are so going to hell...and on Boxing Day, no less.

Going down, party time
My friends are gonna be there too

I'm on the highway to hell

Shawn Powers said...

Thank you, thank you. Don't forget to hug your favorite E'er though.

Janiece Murphy said...

See you all there!

::sings::

Nathan's getting a dishonorable discharge, Nathan's getting a dishonorable discharge! Neener, neener, neener!

Shawn, Janiece, Did you both make cookies? I could be wrong but I'd expect you both to have some visitors fairly soon.

Bwahahahahaha

Shawn Powers said...

Visitors have to be really determined to come all the way up here to visit. Thankfully, I also have handfuls of useless chicken livers I can throw at them. I'm also renowned as an expert tofu weapon designer.

But really, Jim and Tania win the, "betcha won't come get me" game.

Janiece Murphy said...

Actually, I do have cookies. And visitors to my home, both real and virtual, are always welcome and treated with respect, as long as they behave appropriately.

Otherwise, they get the hook. And while I don't think I'd be as adept as wielding the hook as Scalzi, I expect I can hold my own.
