One of my absolute favorite things to make for pot-luck is home-made Macaroni and Cheese. Because, really, what's better and more popular than good Macaroni and Cheese?

Here's my easier-than-falling-off-a-log Mac-n-Cheese recipe. I usually use lots of coarse ground black pepper, and I tend to go easy on the cheddar cheese - it's pretty oily. I've found a combination of colby, jack and cheddar gives the best texture and flavor. If I'm cooking just for us, I use this recipe; for pot-luck, I double it.

All-Day Macaroni and Cheese

8 oz elbow macaroni, cooked and drained
1 can (12 oz) evaporated milk
1 1/2 cups milk
2 eggs
4 cups (16 oz) shredded cheeses, divided
Salt to taste
Coarse ground black pepper to taste

Place the cooked macaroni in a 3 1/2 quart (or larger) slow cooker that has been coated with nonstick vegetable spray. Add the remaining ingredients except 1 cup of the cheese; mix well. Sprinkle with the remaining 1 cup cheese, then cover and cook on the low setting for 5 to 6 hours, or until the mixture is firm and golden around the edges. do not remove the cover or stir until the macaroni has finished cooking.

I usually end up stirring it - my crock pot is hot on one side, and it gets too crusty along the side if I don't.

Hmm...mac-n-cheese!

variation: saute some onions and mushrooms in bacon fat (seperately, the mushrooms should be browned) and add before cooking.

Bacon makes everything better. I make a similar recipe with bacon bits, onions browned in the bacon fat, and gruyere cheese.

Mmmm, bacon.

I believe that the Satanic fungus makes you see things that aren't there before you pitch forward into a pool of your own vomit.

But I might be confusing them with tequila shooters.

No bacon, but bring on the onions and Satanic Fungii (not to be confused with Michelle's tequila shooters)! They are especially good when sauteed with good olive oil and a bit (or a lot) of garlic salt (Lawry's, of course).

Alas, alack, I cannot partake of this thoroughly yummy sounding recipe. Macaroni and cheese of all kinds make my tummy upset. Same with alfredo sauce. I seem to have a slight lactose intolerance problem which reveals itself in unpredictable ways. *pout*
